Gluten-Free Dairy-Free Pumpkin Cookies

Ingredients:

  • 1 cup pumpkin puree (canned or fresh)
  • 1/2 cup coconut oil (melted) or dairy-free butter
  • 1/4 cup maple syrup or agave syrup
  • 1 tsp vanilla extract
  • 1 1/2 cups gluten-free all-purpose flour blend (make sure it contains xanthan gum)
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground ginger
  • 1/4 tsp salt
  • 1/2 cup dairy-free chocolate chips or nuts (optional)
